Atlantic salmon · Fillet
Salmo salar
Trim E is Trim D with the skin removed. It is the standard input for portioning lines, sous-vide programmes and any application where skin has no role. Because skinning removes weight and exposes the flesh, the yield basis and the handling window both change — this page states both rather than leaving them to be discovered after delivery.
