Before you order
Procurement considerations
Fat is a lot property, not a species property
Ask for the analysed figure for the lot being offered, with the catch date next to it. We do not publish a fixed species figure.
Jumble and hand laid are different products
Hand-laid fish costs more to pack and arrives presentable. Jumble packing is correct and cheaper for a processing line.
