Overview

Saithe is the workhorse of Norwegian whitefish: high volume, firm texture, darker flesh than cod, and a price point that makes it the default for industrial processing, German smoking programmes and a large share of klippfisk production. Because it is bought in volume, the difference between one grading ladder and another is money, not detail.

Saithe is supplied commercially in H&G, fillet, loin and split form, frozen or salted.

Size and weight grading

Grading is grouped by product form. Where more than one system exists they are kept apart — a band from one ladder is not the same commitment as a band from another.

H&G grading — five-band system

Gross weight of the headed and gutted fish.

  • 1–2 kg
  • 2–4 kg
  • 4–6 kg
  • 6–8 kg
  • 8+ kg
  • Custom specification We quote against your own band

H&G grading — three-band system

Gross weight of the headed and gutted fish. An alternative ladder. The two systems are not interchangeable.

  • 1–2.5 kg
  • 2.5–4 kg
  • 4+ kg
  • Custom specification We quote against your own band

Fillet size bands

Weight per fillet, net of glaze unless stated otherwise.

  • 200–400 g
  • 400–600 g
  • 600–900 g
  • 1 kg+
  • 1.5 kg+
  • Custom specification We quote against your own band

Loin size bands

Weight per loin piece.

  • 200–400 g
  • 400–800 g
  • 800 g+
  • 1 kg+
  • Exact buyer specification We quote against your own band rather than forcing a preset.

Specify the dark layer

Saithe carries a dark muscle layer under the skin. How much of it is removed is a processing decision with a direct cost, and "skinless" alone does not settle it. If you need a pale fillet for a retail pack, ask for deep-skinned product and agree the tolerance.
