Overview

Snow crab is traded in ounce grades that describe the weight of a cluster, and those grades are only half the story. Count per carton, meat fill percentage, glaze percentage and the net weight underneath the glaze decide what the shipment is actually worth. Below, each of those is treated as a separate contractual field rather than folded into a single grade label.

Specifications

Size and weight grading

Grading is grouped by product form. Where more than one system exists they are kept apart — a band from one ladder is not the same commitment as a band from another.

Cluster grades (ounce)

Weight per cluster. State whether the grade is measured before or after glazing.

  • 3–5 oz ≈85–142 g
  • 5–8 oz ≈142–227 g
  • 8 oz+ ≈227 g+
  • Custom specification We quote against your own band

Need a different size? We quote against your own grading system rather than forcing a preset.

Cluster / section

Attributes a buyer fixes in the contract for this form. Everything here appears in the quote configurator.

  • Cooked or raw
  • Minimum meat fill Specify a minimum fill if your purchasing specification requires it. Fill follows the moult cycle, so it is a lot property.
  • Shell condition
  • Leg breakage tolerance
  • Count per carton Two cartons at the same grade and net weight can hold different counts.
  • Catch method
  • Freezing method
  • Glaze State a maximum percentage, or select supplier standard.
  • Weight basis A price against gross weight and a price net of glaze are not comparable.
  • Production or catch date requirement

The Barents Sea snow crab fishery is regulated with a closed period during the moult, so production is concentrated outside it. Meat fill at the start and end of the season is not the same, which is why fill belongs in the contract.

A grade is not a net weight

A 5–8 oz cluster at 12 % glaze and a 5–8 oz cluster at 20 % glaze are not the same purchase. Agree the glaze percentage, agree that the price is against net-of-glaze weight, and put the method of verification in the contract.
