Portugal
Portugal buys Norwegian whitefish in a form most other markets do not: salted and dried. Buyers here specify on cure, moisture, whiteness and thickness before they get to weight, and the vocabulary of the trade is bacalhau rather than cod. What follows is written for that vocabulary.
